Fall Pasta Toss
This was super yummy, super simple and and also super economical. I had a coupon for Perdue all natural carved chicken breasts, original roasted(thanks Courtney for the tip). We have been on the road- and this was fresh and quick! Just what we needed!
1 box Perdue chicken strips (heat in a pan- sprinkle powdered garlic on them as they heat through)
1 lb bag of the little hat pasta(Orecchiette) cooked al dente- any type will do
4 small zucchini & 4 small yellow squash, cut into bite sized pieces- stir fry in a little olive oil. At the very end add a small, very small, pat of butter.
Stir in 1 can fire roasted tomatoes.
Add lots of garlic powder and salt to taste, a few shakes of cayenne pepper, a little freshly ground nutmeg, and a tsp ground oregano (rub btw your fingers to release the oils and flavor).
Toss with pasta and top with chicken and freshly grated pecorino or Parmesan cheese.
Serve on paper plates. Quick clean up- then go enjoy the rest of your evening!
