Granola is Back

After a brief hiatus, granola is back.
I thought I was going to have to rename this site to granola hog... but I am on the right track now and moving forward! It is my desire to encourage you to feel your very best to carry out your Kingdom assignment!!!!!!!

Have lots of healthy- heart warming recipes to share- but first wanted to share some really good, fast convenient meals that can help those of us on the go...

Breakfast- I discovered that Kashi makes a really, really good golden brown maple oatmeal. (about 50 cents a serving)

Snacks- good ole natural popcorn- add a little salt- of course air popped is best. Bananas, apples and nut butter (just a little- full of fat), roasted veggies (our favorite- zucchini, carrots, assorted small potatoes). Also good- buy a whole pineapple- so much cheaper- peel and cut into strips- save for snacking and adding to smoothies! And my favorite afternoon snack- a warm cup of caffeine -free peppermint tea and a pumpkin flax bar from Kashi enough protein to give me that late afternoon energy boost I need.

Dinner and Lunch- brown rice( boil in bags are great) is a whole grain that we love! Here is a fast and super simple meal:

1 large family bag of boiling bag brown rice
1/2 can fire roasted tomatoes
1/4 c kalmata olives
1/4 c frozen green peas
squirt of lemon juice
tablespoon of olive oil ( I used lemon olive oil)
1/4 cup toasted pine nuts
dash or two of cayenne pepper
garlic powder to taste
sea salt to taste
3 cloves

Add all ingredients to warm rice. Let it sit for at least ten minutes. Reheat if necessary and serve.

We also love to add our favorite Makoto ginger dressing to brown rice with left over veggies. Top with roasted almond and you have a meal.
