Red Cabbage & Soy Burgers

1 red cabbage, sliced in thin strips(beware- my hands are still purple this morning!)
olive oil
garlic
salt and pepper

Saute cabbage until tender in a little olive oil (it still will have a little crunch). I added about a fourth a cup of water towards the end and put a lid on my saute pan.

Meanwhile, cook soy burgers on your little indoor grill. Serve with fresh fruit and cabbage.
A healthy fast meal!
* check ingredients on soy burgers if you are fasting- some varieties have hidden ingredients.
