Peas & Pasta

1 lb of pasta (box) of your choice
2 tsp lemon olive oil
1/4 c chopped shallots or sweet onion
1 tsp dried thyme
Grind or two of sea salt
pepper to taste
2 c low fat milk
½ c low fat sour cream (fat free doesn't taste good)
1 c crumbled blue cheese (Danish works nice- Gorgonzola too strong for this)
1 c frozen peas
4 strips of cooked bacon crumbled

Cook pasta & drain. Heat oil in skillet, add shallots. Cook about a minute over medium. Add milk. When tiny bubbles appear around the edges of the pan reduce heat to low and stir in sour cream and blue cheese. Add peas, cooked pasta and spices. Garnish with crumbled bacon.
