Tropical Salad










1 clove garlic, diced & barely cooked in 1T oil (olive, canola or safflower)
1 can black beans(rinsed)
2 cups jicama (shredded)
1 large ripe, but not too ripe mango, peeled and diced
½ cup red pepper, diced
¼ cup lime juice
1/4 c coconut milk(unsweetened)
1 tsp cayenne
1/4 cup cilantro chopped
1 tsp ground cumin
cinnamon (few dashes)
sea salt to taste

Mix lime juice, coconut milk and spices, pour over all other ingredients. let sit for a few hours in fridge. Enjoy!
