Breakfast Cookies
You can make and freeze!
1 cup all purpose flour (unbleached)
1 cup oats (not quick cook) milled into flour- I use my magic bullet
¼ cup walnuts milled into powder (again- magic bullet- I add to oats)
½ tsp baking soda
¼ tsp salt
4 Tablespoons butter, softened
1 egg, beaten
¾ cup banana, mashed
¾ cup brown sugar (you can use less if banannas are ripe and sweet)
Mix dry ingredients. In a separate bowl, mix butter, sugar, egg, banana and vanilla. Blend both together- throw in a ½ cup of chocolate chips (semi sweet) or 1/ cup of raisins. Cook in a preheated 400⁰ oven on parchment paper.
