Ice Cream

Homemade Coconut Ice Cream (not so good for you- a rare treat and when I added up the cost it was about $10.00 to make but we served 10 people this the other night- so not so bad when you consider how yummy and special)

1 pint half and half
1 pint of 2% milk
1 small can of sweetened condensed milk( about 14 oz I think)
1 can of coconut milk (this is not sweetened)

Put in your ice cream maker- surround with rock salt and ice. In a few- you'll taste something mighty good!!!!

Vanilla Ice Cream (note this recipe- best I could gestimate has about 16 grams of fat per serving)

1 pint of fat free half and half
1 pint of heavy whipping cream
4 cups of 2% milk
1 3/4 cup of sugar (more or less to taste)
1 T of vanilla
Dash of salt

Put in ice cream maker. Surround with ice and rock salt. Top with your favorite topping. We love to make a homemade caramel sauce: Mix few table spoons of butter, few tablespoons of brown sugar until melted together. Add a tsp of vanilla and sliced bananas. This is soooooo good over ice cream!!!!

Also can warm fruit jam- Gene likes peach and pour over! Yum

Ok- I know you all are laughing because it seems that healthy went out the door with these two recipes- but this is a once a month kind of dessert!!
