Black Beans and Rice


Doesn't get any easier than this.

2 cans of organic black beans, rinse all but 1/2 of one can- you need some of the starch.
Dash of cinnamon
few dashes of garlic powder
couple of dashes of cumin (go easy on this one until you know how much you like)

Optional:
jar of good salsa
avocado sliced or guacamole(see recipe under labels)
low fat jack cheese
your favorite rice cooked- with this we love basmati

Put rinsed beans and 1/2c of unrinsed beans in a small cooking pot. Give a few mashes and add spices. Cook over low heat until beans are heated through and warm. Serve immediately over you rice. If you like-top with avocados, salsa & cheese.

*update 8-24-09 tonight I served this with brown boil in bag rice that I cooked yesterday- heated up with 1/4 cup of coconut milk and a heavy dash of cinnamon
