Cheese Biscuits

This is not an everyday kinda a thing... but I don't use lard- and I use low fat cheese! A lot lower in fat than what you would get in a southern restaurant. Not as good as Granny Fa- Fa's- but these disappear at our house quickly!

Large, wide bowl
2 c self rising flour
1 stick of butter
1 c heavy whipping cream
1 3/4c low fat shredded cheddar cheese or Shredded Low fat Mexican Blend

Preheat oven to 425 degrees (if your oven runs hot, 410 degrees will do). Cut butter into flour add whipping cream. Fold in cheese. Knead in the bowl just about 10x. Dough should still be a little sticky. Pinch off about half of a fist sized amount of dough and gently form into a ball. Cook on parchment about 15 minutes- but watch out- ovens are different (and so are fists!!!)
