Good Start Pancakes


Good Start Pancakes

3/4 c unbleached flour(yes, I use organic)
1/4 c oats
3/4- 1 c milk (if batter is too thick I add a little more than 3/4 c, up to 1 c)
1T sugar- (love raw cane sugar)
2 tsp baking powder (aluminum free)
2 T veg oil (canola- I used olive for years- but it really tastes better with canola and our pancakes are no longer GREEN, ha ha!)
1/4 tsp sea salt ( you can add as much as 1/2 tsp- too much for me)
1 egg
Mix dry ingredients, pour in all the wet ones. Mix until smooth(will still have oat lumps- that's ok).
Cook on your griddle or non-stick pan. We love to top with real butter (just a little) and maple syrup or for an extra special treat- we top with roasted macadamia nuts and coconut syrup (Coco Lopez cream of coconut ).
