Chicken Curry ...in a hurry

1 Rotisserie chicken
1 T olive oil
small onion, sliced
2 Tablespoons curry powder
1/2 c plain yogurt
1/2 c heavy cream
1/2 t salt
1 14 oz can organic diced tomatoes (drained)
fresh cilantro
toasted coconut(optional)

Pull chicken off the bone (I only use white meat for this)
Cook onion in oil. Add curry powder, stirring for 1 minute. Add yogurt and cream, simmer on low for a couple of minutes- till it all comes together. Add tomatoes and chicken.
Salt and pepper to taste. Serve over your favorite rice. Garnish with cilantro and toasted coconut!
