Bucatini Pasta with garlic, tomatoes and walnuts

1 lb of your favorite noodle pasta cooked al dente- perciatelli (bucatini- a spaghetti with a hole down the center- like a drinking straw) is our favorite- but any spaghetti will do
1/2 c olive oil
3 large garlic cloves ( you can buy these now in bulk, already peeled)
1 c flat leaf parsley, chopped
1 can organic diced tomatoes or 2 fresh ripe tomatoes chopped
4 T toasted bread crumbs
2 t finely chopped toasted walnuts
pinch of red pepper flakes(to taste)

garnish:1/2 c freshly grated Parmesan( I buy a big wedge at Sams) or pecorino cheese

Heat oil and garlic(don't burn garlic- but get it nice and brown for this recipe. Toss pasta and all other ingredients in pan. Cook 1-2 minutes. Garnish with cheese. Serve with a salad.
