Healthy Chicken Salad

3/4 of a small container of plain yogurt(low fat is fine)
a squeeze of lemon juice(in the yellow squeeze thing is fine)
salt ( to taste)
1 T curry powder (I use a generous amount- see what works for you)
1/4 c toasted almonds or roasted cashews
1 stalk of celery diced small
1/2 cup (or more if you like) golden raisins
3 chicken breasts (cooked) cut up into smaller than bite sized pieces


Mix first seven ingredients. Toss with chicken. I served with cheese toast, watermelon and pineapple.
Note- 8/07/09 we added chopped macadamia nuts instead of cashews or almonds- excellent!!!!
