Practical Pasta

We love this and always keep these simple ingredients around so we can have this nutritious meal that can be ready in the time it takes you to boil water.

1 box of your favorite pasta

real parmesan cheese or parmesan reggiano (1/2 c or more to taste)

fresh baby spinach(several cups)

toasted walnuts pieces (I toast and then crumble in my hands)

1-2 cups fresh tomatoes or good organic diced tomatoes

olive oil ( I love to use lemon olive oil in this recipe- but regular will do)



Cook pasta al dente. While pasta is cooking chop tomatoes and toast walnuts and grate cheese. Drain pasta and return to pot. Toss in fresh spinach and put lid on your cooking pot. Wait a minute, stir in other ingredients. Add salt to taste - after you have added cheese. Enjoy!

In the winter months we add fire roasted organic tomatoes and sometimes we add artichoke hearts and substitute toasted pine nuts for walnuts.
