Simple Summer Lunch
Boil a package of whole wheat or Barilla Plus Pasta. Place in fridge to use for meals for the next couple of days. Saves a lot of time throughout the week. Makes for an easy, healthy lunch to take to work!
1 cup of cooked pasta (whole wheat or Barilla Plus)
1/2 of a large fresh tomato cut into bite size chunks
1 cup of fresh baby spinach
1 T toasted walnuts
1 tsp lemon olive oil
Sea Salt & Black Pepper
Plop on a plate- eat cold or pop into the microwave for 30 secs-1 minute.
Excellent!! You are getting your omega threes- vitamin A, vitamin C and lots of fiber! Top with fresh parm if you like- but this really doesn't need anything else.
